Meal Plan Week 27 In-Depth and Top Tips
Monday
Meal Hot Chicken Sandwiches and Salad
Last week we made Roast Chickens for dinner on Sunday and this is one way we are using up the leftovers.
Layer the sandwiches in an open faced fashion and ladle on the reheated gravy over the sandwiches. They take a knife and fork to eat.
The chicken and stuffing can be warmed in separate frying pans with a bit of water, covered for 3-4 minutes. Remove the lid and cook off the excess water. The gravy should be reheated in a pot until simmering. A bit of water may be needed to thin it out, as well.
The salad will be cucumbers and tomatoes tossed in oil and vinegar mixed together as a dressing. Dressings are traditionally made in a 3:1 ratio of oil to vinegar. We have a fabulous selection of oils and vinegar we may use. They are a great way to add flavour without adding loads of allergens.

Top Tip:
When cooking meals that produce gravy like our Gluten Free Roast Chickens from last week always keep the extra gravy as it can be frozen for other meals. This means that if there isn’t enough left over chicken the sandwich can still be made with either safe luncheon meat like Applegate or by cooking up a boneless, skinless chicken breast or thigh.
How to pack it for lunch the next day:
Instead of an open faced sandwich made a traditional sandwich with the stuffing on the side. Hot gravy can be sent in a thermos or in a microwave safe container if there is access to a microwave. The gravy can be used as a dip for the sandwich like in a French dip.
Tuesday
Meal Air Fryer Boneless Beef Bites and Fried Rice

We will be cracking out the air fryer to help make dinner tonight. The beef bits can be made with pork, lamb, or chicken, if preferred. We have beef in the freezer and will be using it. It is a quick dinner that can be made easily by one person as the beef cooks in the air fryer and the rice can be fried up on the stove.
The Fried Rice is our own soy free recipe that we make. It is a great way to have that takeout taste at home. We don't use Just Egg as in Canada it contains soy but if in the US is may not so it would be a great addition to the rice with a pinch of black salt, Kala Namak for the eggy flavour.

Top Tip:
Make the rice earlier in the day to let it cool completely in the fridge so it crisps up the most it can.
Marinade the beef bits before going to bed the night before for the most flavour.
How to pack it for lunch the next day:
We do not recommend sending the fried rice leftovers for lunch. There can be a safety risk with not eating piping hot reheated rice as per the NHS site. The air fryer beef can be sent cold with cut veggies, dairy free yoghurt (and spoon) on the side and some cut up fruit like apple or orange slices.
Wednesday
Meal Breakfast for Dinner - Waffles and Bacon

We have a great waffle maker and will be using it to make Belgian style allergen friendly waffles. To make sure your waffles don’t stick, use a really well seasoned high quality waffle iron and make sure there is enough oil in the batter.
We do our bacon in the oven as there are 6 of us. This also allows us to focus on the waffles, if not made ahead. We use a large cookie sheet with sides and an oven safe rack that fits in the sheet. Lay the bacon on the rack and baked at 350 for 10 mins. Remove from the oven and each piece flipped over and put back in the oven.Cook for another 5-10 minutes or until the bacon is slightly crispy.
Then remove to a paper towel lined plate to drain. We save the excess bacon fat that has dripped off the bacon and stored in a jar for use in recipes like red cabbage and Eintopf.
We will serve the waffles with a couple slices of the bacon, cut fresh fruit (whatever is on sale), and maple syrup.

Top Tip:
Meal prep tip- If time is an issue make the waffles ahead on the weekend and use some for brunch. Freeze the rest in a large freezer bag with parchment between them. This allows you to use only what you need. Reheat the frozen waffles in a toaster for crispy ones or in the microwave for soft ones. Using reheated ones for dinner will speed up the dinner making considerably.
How to pack it for lunch the next day:
In a well sealing lunch container or bento box waffles send cold waffles. Cut them in squares or rows. A bit of maple syrup to dip the waffles into in another well sealing section of the box. A bit of dairy free yoghurt and fresh fruit chunks in tow other sections. Don’t forget the spoon for the yoghurt.
Thursday
Meal Eintopf and Gluten Free Rolls

This German Eintopf soup is one of our favourite meals. It is an easy soup that freezes well. We will serve it with a gluten free bread roll to soak up all the yummy broth at the bottom of the bowl.
This soup freezes really well. Prep it ahead and freeze in pre-portioned containers for quick dinners. We also like to double our batches and freeze half for when we need a fast dinner. The night before we thaw the soup in the fridge and simply reheat it to save time, money, and energy.

Top Tip:
Cook extra bacon the night before and use it in the soup to save time.
How to pack it for lunch the next day:
Warm up a thermos by filling it with very hot water. In a pot on the stove over medium-high heat bring the desired amount of soup to a boil. Reduce the heat and let it simmer for 3-4 minutes. Dump the hot water out of the thermos and pour the hot soup into it instead. Seal the thermos and send it with a gluten free roll and a spoon for lunch.
It is important to make sure the kids can open the thermos themselves and that the soup isn’t too hot when they open the thermos, for safety.
Friday
Meal Leftovers
Any of the food from the last few days that is leftover will be our dinner tonight. We often do this once a week to use up any bits from earlier dinners. The only one we will not use is the fried rice due to the food poisoning risk of saving rice for more than one day. We may cook up a bit of plain white rice, if we need an extra side.
We often reheat the leftovers and put them on the kitchen island and everyone grabs a bit of each like our own little buffet restaurant.
Top Tip:
This is a fantastic way to save extra work. Many of the dishes are good cold or reheated quickly. It is also the best way to help and save money by not letting what we already have not go to waste.
How to pack it for lunch the next day:
We won’t be sending leftovers for lunch as the kids will be tired of them by then, however if any cold bacon is left it will become BLT sandwiches for lunch. A Bit of Gluten Free Bread, vegan soy free mayo, lettuce, and a bit of tomato with the bacon.
Saturday
Meal Eggless Meatloaf, Roast Potatoes, Carrots

We will be having our big weekend meal on Saturday as the kids have soccer on Sunday over dinner. We will be making a couple of meatloaves with herb de provence roasted potatoes and steamed carrots.
To make the carrots we will be steaming them and putting a bit of honey, salt and pepper on to serve.
Top Tip:
The Meatloaves freeze well. Making a double batch for other dinners and freeing it will save time.
How to pack it for lunch the next day:

Send the meatloaf in a microwaveable container and heat it at school for 1 minute and 20 seconds. If there isn’t a microwave we heat a thermos with hot water and reheat the meal in a frying pan with a touch of water. Cover the pan with a lid and let cook for 3-4 minutes. Remove the lid and cook for another 2-5 minutes until the water has boiled off.
Mix the carrots and potatoes together and place at the bottom of the thermos. Be sure to drain and wipe it dry first. Flip the meatloaf to fry up both sides slightly and cut in chunks and layer on top of the potato and carrots mix.
Sunday
Meal Meatloaf Sandwiches and Fries
This is an easy diner dinner we love as a family. We slice up the cold meatloaf into around 1 inch thick slices and fry them in a frying pan until heated through.Another way to cook the meatloaf slices is to put them on a parchment lined cookie sheet and bake at 350F. Cook for 5-10 mins and then broil for 1-2 mins until starting to crisp up and flip to get the other side. This is a great way when making many at once.
We put the meatloaf slices on the bread and our kids love them with ketchup, which is safe for us.
For the fries we make them in our air fryer. We slice peeled starchy potatoes into fry sized pieces and soak them in cold salt water for 30 minutes. Then dry them on a kitchen towel. Toss them in 1-2 tablespoons of neutral oil and cook in the air fryer for 24-28 minutes shaking often.

Top Tip:
This also works well from frozen meatloaf cut into slices before freezing. The slices should have parchment between them to prevent them from sticking together in the freezer.
How to pack it for lunch the next day:
Just as It was served for dinner, as a sandwich with a bit of ketchup or favourite top 8 free condiment on the bread. The meatloaf can be left cool and not fried up.Instead of fries we will send plain potato chips in a reusable bag. Check the brand manufacturer for cross contact and verify the ingredients every time.
