Why We Like Roasted Broccoli
We love oven roasted broccoli as a side dish because it is so easy. It is no secret around here. Both Rob and I struggle with chronic illness so quick and easy vegan broccoli recipes are a must for us. Going out to eat may not be an option for you, like it isn't for us. There are so few, if any restaurants that can accommodate our family's multiple food allergies.
That means we have to cook every single night. It gets tiring. So we focus on recipes, like this one, that add a bit of a change to what we cook with little effort. Steamed broccoli is great but when we need a change this is the baked broccoli recipe we make. It is really easy to make a lot of it for large families, quickly.

Ingredients
- Broccoli Florets
- Neutral Oil
- Garlic Powder
- Sea Salt
- Ground Pepper
See recipe card for quantities.
The Ingredient Low Down
Broccoli Florets
We use primarily the florets because they crisp up nicely and add a lot of texture to our side dish. Cut the florets in half if they are larger so they are all around the same size. The more uniform the size of pieces, the more evenly the broccoli will cook.
You can use the stalks, peel and cut them into 1 inch by ½ inch chunks and cook them the same way. You can also freeze the broccoli stalks and save them for our amazing Dairy Free Broccoli Soup. Don't throw them out!
Fresh broccoli is our preferred vegetable for this baked broccoli recipe. You can however swap it out for frozen broccoli. It may take a bit longer to cook as these pieces may be larger than what we use for the fresh broccoli.
Frozen broccoli also doesn't crisp up at the end of the florets like it does when it is fresh. In case you are trying to go for that texture, opt for the fresh variety.
Neutral Oil
The kind you use is up to your preference for cooking at higher temperatures. We use avocado oil or olive oil. What you use should be a mild tasting oil so it doesn't flavour the gluten free roasted broccoli side dish. Keep in mind that not all oils have the same smoke point. Use one that is rated for use at 425 F. Check out this table for more info.
Whichever oil you choose, make sure it fits your allergy plan with your medical team. Not everyone can have refined oils from allergens like peanuts and soy so talk to your allergist to see what is best for you. Some vegetable oils contain soy so check with the manufacturer for any questions you have on those.
Garlic Powder, Sea Salt & Ground Pepper
There are some vegan broccoli recipes for which we prefer garlic granules or garlic powder for. This is one of those vegan broccoli recipes. If we use fresh garlic in it, the garlic burns during roasting. So instead, we use dried garlic powder as it gives us a mild garlic flavour and doesn't burn.
Check your spices for cross contact with the manufacturer if you need to avoid cross contact. Many are processed on shared lines or facilities. May contain labels for other allergens are voluntary and not regulated so checking each one if you need to avoid shared lines and facilities, is a must.
How to Make Roasted Broccoli

Step 1
Preheat the oven to 425 F. Trim the broccoli florets. Cut larger ones in half and put them on a parchment lined cookie sheet or large glass casserole dish. Pour the oil over the broccoli. Sprinkle half the garlic powder, sea salt, and ground pepper over the vegetables.

Step 2
Mix the broccoli with a spoon to coat with oil and seasonings. Spread the broccoli out in a single layer over the pan. Sprinkle the remaining sea salt, garlic powder, and ground pepper over the broccoli.

Step 3
Place the pan in the oven and roast for 14- 15 minutes, or until the floret tips are starting to crisp up and turn a golden colour. Check in on the baked broccoli every so often to make sure it doesn't burn or overcook instead of going crispy.

Substitutions & Variations
- Onion Powder - Swap out the garlic powder for onion powder for a milder taste.
- Lemon - For a citrus punch squeeze half a lemon over the broccoli after roasting and before serving.
- Cauliflower - You can replace the broccoli with cauliflower and get another great side dish.
- Spicy - Add a sprinkling of chilli oil and a pinch of dried red pepper flakes before serving the gluten free roasted broccoli.

Storage and Reheating Instructions
Storage
Fridge
Gluten free roasted broccoli is best stored in the refrigerator for up to 3 days in an airtight container. The broccoli doesn't freeze well once roasted.
Reheating
The oven roasted broccoli can be eaten cold after storing properly. It doesn't need to be reheated. Only reheat food once for best food practices.
Stove Top
To reheat the gluten free roasted broccoli, it is best on the stove top. Use a medium pan over medium high heat with 1 tablespoon of water with the broccoli. Cover the pan and let it steam for 2-3 minutes. Then remove the lid and let the water cook off. Stir the broccoli and add a tiny bit of oil, if needed to help crisp up the broccoli.
Equipment
- Cookie Sheets, or 9 x 13 Glass Casserole Dish - For cooking the gluten free roasted broccoli on. The glass casserole dish tends to get the broccoli crispier.
- Spoon - To spread out the broccoli and mix it with the spices and oil.
- Parchment Paper - The cooking paper or aluminium foil can be used to cover the cookie sheets. You don't have to use it but it helps keep the oven roasted broccoli from sticking to the sheet and makes for an easier clean up. Not using it and using dark cookie sheets will make the broccoli cook quicker.
- Measuring Cups and Spoons - For measuring the spices, oil, and broccoli.

How to Make Air Fryer Roasted Broccoli
Follow the recipe for coating the broccoli in spices and oil as well as cutting it to the right size.
Prepare the broccoli as per the baked broccoli recipe. Instead of preheating the oven, preheat the air fryer. When it is hot, spray the basket with a small amount of oil.
Add the seasoned broccoli to the basket. Air fry at 380 F for 8-10 minutes. At the halfway point flip the broccoli over in the basket so it cooks evenly.
FAQ
It takes about 15 minutes to roast broccoli that is cut up into small to medium sized florets in the oven at 425 F. The oven roasted broccoli will be both slightly browned and crispy and still have a bit of a snap to them. Any longer and they lose the crisp and become limp or tough and burnt.
The best roasting temperature for broccoli is 425 F. Any higher and they will burn on the outside and be raw inside. Lower than this and the oven roasted broccoli tend to steam more than roast as they cook.
Yes, you can and it is delicious. Roasted broccoli is slightly crisp on the ends, cooked all the way though, but not limp. The oven roasted broccoli should still have a bit of crunch to it but be cooked and not raw.

Notes
Allergy Note 1
Always check that each ingredient is safe for you. Reading all the ingredients and labelling as well as checking with the manufacturer should always be done before buying any product. Each person's allergies are different and only you and your medical team can determine what is best for you. Checking with the manufacturer is best practice to see if shared lines, or facilities are used when making any of the suggested products. Just because a product is right for us does not mean it is safe for anyone else. You must do your own research on each product.
