    Why the Avocado Apple Pear Salad?

    For so many it is a few weeks after the New Year's resolutions and this is when the struggling starts. The third Monday in January is called Blue Monday as so many feel this blah of winter starting to set in. Instead of giving up we have doubled down and made this top 8 allergen free salad recipe with a hint of blue but a heap of green to remind us that spring is right around the corner. We ate it while listening to the New Order song "Blue Monday" one of the albums we love but are still trying to find on vinyl for our extensive collection.

    Ingredients for the avocado apple pear salad

    Avocado- a large just ripe avocado slices perfectly for this salad.

    Apple pear- thinly sliced, and free from bruises. Honey crisp apples or Bartlett pears can be substituted to make it an avocado apple salad or avocado pear salad.

    White onions- if you would prefer using a sweet onion or red they work well, too.

    Spring mix- this lettuce, rocket, or romaine are all fantastic in the avocado apple pear salad. The spring mix is a nice variety.

    How to make Avocado Apple Pear Salad

    Pile the Spring mix in a large salad serving bowl. Top with the toppings all thinly sliced-- apple pears, avocados, and white onions. Sprinkle on pumpkin seeds for crunch.

    Storage For This Top 8 Allergen Free Salad Recipe

    This avocado apple pear salad will keep for 24 hours made up without the dressing on it, in the fridge in a sealed container. With the dressing on it keeps for 20 minutes in the fridge but serve immediately if the dressing has been poured on it. Unfortunetly, this salad isn't suitable for freezing.

    What Makes the Avocado Apple Pear Salad a Great Salad? 

    For me all salads need to have a few things. I don't mean lettuce and dressing. Many times I don't include either lettuce or dressing, I opt for a squeeze of lemon instead of a dressing. I am talking about texture and taste. Two things are a crunch and a sweetness. With this allergen friendly salad the crunch comes from the pumpkin seeds and the apple pear. The sweet is brought by the blueberries and apple pear. 

    What is an Apple Pear?

    I have heard it called so many different names: Apple pear, Asian pear, Japanese pear, sand pear, and zodiac pear. In most stores here in western Canada you’ll see them called Apple pears. If you are looking to buy them they are near the other pears or apples but often sporting a cosy looking styrofoam jacket. They come with this protective layer as they bruise easily.

    It is a breed of fruit that originally grew in Asia but does grow in California and Australia. This is not the kind of pear or apple that you cook. It is mostly water and is known for its crispiness. There is really nothing as satisfying some days as biting into one of these babies. The taste is really mild yet can be sweet when fully ripe.

    What Should Be Served With This Vegan Salad?

    Soups and main courses are excellent with this avocado and apple pear salad. It also make a wonderful lunch main course or light dinner. This vegan salad recipe is enough for 2 lunch size salads that are a meal in their own right. If you are looking for a more filling meal we often have this salad with our Curried roasted cauliflower soup. This recipe for salad would also work as a side salad for dinner with a mushroom roast.

    Storage of This Meal Salad

    Storing in the fridge is best for salads like this one. When storing the salad for later, do so without the dressing on the salad. It won't keep with the dressing already mixed into the salad. With the dressing on the side in a tight container the avocado apple pear salad will keep for 8 hours. Avocado and Apple pear will brown once cut. It is best to cut those fresh rather than store cut up on the salad, unless storing for lunch after making that morning as a nice packed lunch meal.

    This leafy based avocado apple pear salad isn't suitable for freezer storage.

    Ingredients

    • Salad
    • 3 C mixed spring greens lettuce
    • 1 avocado peeled and thinly sliced
    • 1 apple pear cored and thinly sliced
    • 3 Tbsps white onion thinly sliced
    • 3 Tbsps raw pumpkin seeds
    • Dressing
    • 2 Tbsps olive oil
    • 1 Tbsps white vinegar or rice vinegar depending on what is safe for you
    • Juice of ½ lemon

    Instructions

    • In a large bowl place lettuce, top with avocado, apple pear, and onions. 
    • Sprinkle with pumpkin seeds. 
    • Combine all the dressing ingredients in a small bowl and mix well with a whisk to emulsify. 
    • Pour dressing on salad to desired amount and mix the salad. Serve in individual bowls or plates.
