What Kind of apples are the best apples for pies?
Use apples that stay firm and are good pie apples such as Crispin, McIntosh, Granny Smith, Honeycrisp, and Spartan. For a complete list check out the Ontario Apple Growers site or the Washington State best apples for pies page. These apples will keep their shape rather than fall to mush.
Not all apples handle the baking the same way. Some have different textures and do not hold up their shape and firmness when baked. Those kinds of apples are really good for applesauce instead. In pies they turn to a goopy mess if they are not “pie” apples or may not have a strong enough zing to come through with the spices and sugar.
Another reason some apples are the better ones to use in pies is the flavour. These apples have the right balance of tartness that blends well with the sweetness of the sugar in the pie. Granny apples are one of the most used apples in baked apple pies for the balance theri tartness gives to the sweetness of the filling.

The Ingredient Low Down
Large Pie Apples
It is best to use apples that are firm and have a taste that melds well with the apple pie sweetness. Granny smith apples, and spartans are our favourites to use. There is more information in the FAQs about which apples in Canada and the US are best for pies.
Pro tip: Peel and corel the baking apples.
Rice Wrap Sheets
You can use either square or round rice paper wrap sheets. They are both easy to fold. The wraps are usually made from rice or tapioca starch.
The hardest part is to make sure to find a producer of the wraps that is stateside, rather than imported so the allergen cross contact risk can be verified with the manufacturer easier. Most rice paper wraps are imported from Asia and may take a while to verify the allergen risk properly.
Vegan Butter
We find a solid bar type of vegan soy free butter works best as it has a little less moisture in it. Less moisture will help keep the rolls from steaming inside and becoming gummy. Our favourite brand for this recipe is Melt Organics Butter Bars. Always check that products are safe for you with the manufacturer.
Rice Flour
To thicken the filling, we use rice flour, either brown or regular rice flour will work in this fried apple pie recipe in a roll. Any All purpose gluten free flour blend you usually use for thickening gravy will work. We find that rice flour doesn’t clump as much as some blends.
Brown Sugar and Granulated Sugar
Both kinds of sugars are used in this Apple Pie Spring Rolls recipe. The brown sugar gives the rolls the molasses taste. This sugar should be measured as packed in the tablespoon so it keeps its shape in when dumped out. The granulated sugar is different, it is measured loose and will pour into the bowl.
Lemon Juice and Zest
We like to use a fresh lemon in this allergen friendly dessert spring rolls recipe to squeeze a bit of the juice, rather than the bottles of juice. To get the wax off the lemon in a heat safe bowl by pouring boiling water over the lemon. Letting it sit for a minute or two then plunge the lemon into ice water and scrub the skin under running water with a soft bristled brush. There are those who say not to bother but according to the Canadian Produce Marketing Association’s website the coatings can be vegetable oil, shellac, beeswax, candelilla wax or carnauba wax among others. Some vegetable oils for example can contain soy, though refined.
Spices
Cinnamon, Nutmeg, Ground Ginger, Allspice, and Ground Cardamom are what we use to create a great apple pie spice in our gluten free apple spring rolls. The spices are all dried versions and can be replaced with 1 teaspoon of a generic apple pie spice, if needed. Remember to check all spices for cross contact with allergens with the manufacturer.

How To Make Apple Pie Spring Rolls in an Air Fryer
Prep the Apples
1- Peel and core the apples. Dice them into small pieces, about ½ inch by ¼ inch works really well. Place the diced apples in a medium to large bowl filled with cold water. To stop the apples from browning 1 tablespoon lemon juice can be added to the water (optional). It is optional as the apples will naturally brown during cooking and be coated with brown spices anyway. Set the apples aside.

Make the Filling
2- In a medium sized microwave safe bowl, mix the melted butter and the rice flour. Whisk to combine until the lumps are gone and fully incorporated.
3- Heat in the microwave for 15 seconds. Remove from the microwave and stir.

4- Stir in both the brown and granulated sugars. Return the bowl to the microwave and heat for 30 seconds. Remove from the microwave and stir well.

5- Slowly add in the hot water and whisk well. It will be tough to combine fully. Set aside.
6- Combine the spices in a small bowl and mix. Set aside.
7- Drain the diced apples and blot them dry on a big clean tea towel or paper towel and wipe down the bowl. It is best to not add more moisture to the filling as it can make the inside of the rolls gummy. Return the apples to the dry bowl.
8- Sprinkle the spices, lemon juice, and lemon zest on the apples and mix.

9- Pour the filling mix on the apple and spices in the larger bowl. Set aside.


Roll the Gluten Free Apple Spring Rolls
10- Fill a large plate with warm water and place it next to a flat working surface, either a plastic cutting board or the counter top. Wet the surface lightly - so the wraps don’t stick.
11- Lay the rice wraps flat to dip them in the water, turning and flipping them to get both sides and all over. They only get dipped for a couple of seconds each side. Leaving them in the water will make them hard to work with and water log them. The wraps will continue to soften as they lay on the work surface.

12- Lay the wrap on the surface. For round wraps — any side closest will work. For square wraps— lay one corner facing you.
13- Scoop 1 ½ - 2 tablespoons of filing about one inch from the side closest to you if the wrap is round. If the wraps are square, spoon the filling about 1.5 inches from the corner nearest you in a small inch wide filling line leaving ½ an inch of infilled space on either side.

14- To roll - flip the sides over to the middle and the end nearest to you rolls away from you until no more wrap is left. Wrap all the rolls the same way.




15- Set the rolled rolls on a plate or cutting board while you roll the rest of the rolls. Or start cooking them a few at a time to speed up the cooking.

Cook the Apple Pie Spring Rolls in Air Fryer
16- Preheat the air fryer.
17- Lightly spray the finished wraps with a neutral oil. Place 4-6 in the air fryer so they are not touching.
18- Cook at 350°F for 10 -12 minutes. Turn the rolls once at the halfway cooking time.
19- While the rolls are cooking, mix the garnish ingredients, ¼ cup granulated sugar and ½ teaspoon cinnamon, in a bowl large enough to accommodate the length of one roll.


20- Remove the rolls from the air fryer and toss them one by one in the cinnamon sugar garnish. Roll them around in the bowl to get all sides.

21- These are best served warm so they are nice and crispy but do let them cool until the filling is not too hot to eat. The filling will be like lava, otherwise and can burn your mouth. We like to cut them in half for the kids so they can cool inside.
Serving Tip: Allergen Friendly dessert spring rolls are best served when warm. The filling can steam inside of the rolls and if left they will make the outside chewy and the crisp will be lost if cooked ahead. Do eat with care, especially for kids as the filling will be hot and if eaten too hot the filling can burn the mouth.

Substitutions/ Variations & Adaptations
- Pear - Instead of apples, pears can be used instead.
- Oven baked - Instead of air frying the rolls can be oven baked. Still spray with a small amount of high temp oil. Bake at 350F for 10-20 minutes or until crisp on the outside and hot on the inside.
- Make with other pie fillings - Switch up the filling to cherry, strawberry, or pumpkin pie fillings with matching spices.
Top Tip For Making Apple Pie Rolls
To save time these gluten free apple spring rolls can be made ahead to the point before they are cooked and stored in the fridge for up to 2 days. They can then be cooked before serving. Another way to make ahead is that apple pie spring rolls in an air fryer can be frozen after cooking and reheated before.
Equipment Needed
- Air Fryer any brand will work. We have a dedicated air fryer that is used only for allergen free cooking.
- Microwave to heat the filling.
- Knife and Cutting Board to dice the apples. The cutting board is also a great place to roll the rolls. If you use rice paper on it, wet it first.
- Measuring Cups and Spoons to get the right amount of filling in each roll and the spice measurements bang on.
- Bowl and whisk for mixing the filling.
- Plate with deep sides to put warm water in for dipping the rice paper wraps.
- A pump sprayer for the oil rather than an aerosol one. This way we can control which oils we use and cut down on propellants used in our air fryer.

Storage and Reheating Instructions
Storage
-Fridge
Once rolled the rolls can last for up to 2 days in the fridge before cooking or up to 3 days after cooking.
-Freezer
After cooking and cooling the fried apple pie recipe in a roll can be frozen for up to 1 month and reheated from frozen.
Reheating
We recommend only reheating the Apple Pie Rolls once.
-Oven
On a parchment lined baking sheet spread out the gluten free apple spring rolls and reheat them at 350°F for 5-10 minutes or until the outsides are crisp and the insides are nice and hot. If the Apple Pie Rolls are frozen, reheat for 10-20 minutes.
-Air Fryer
This dessert is best when served warm. The Apple Pie Rolls only need to be crisped up. A few minutes, 4-6 minutes, in the air fryer at 350°F will do well to heat them through and give them the crispy wrap again. The rolls may need a quick spray of a high smoke point oil for the ultimate crispness. If reheating the apple pie spring rolls in an air fryer from frozen, they will need more time. Reheat for 8-15 minutes for rolls that have been frozen.
- Microwave
We do not recommend microwaving the Allergen friendly dessert spring rolls. They will not crisp up, instead the rice rolls will go gummy.

How to Serve Gluten Free Apple Spring Rolls
These dessert rolls are fabulous on their own at the end of a meal or anytime you would normally serve apple pie. They are fabulous with a scoop of vanilla dairy free vegan ice cream such as, Cado Ice Cream. Another great addition to serving this fried apple pie recipe in a roll is with a caramel sauce like Nature’s Charm to drizzle on the rolls, in place of the cinnamon sugar.

Filling Mix:
- 3 Tbsps Vegan Butter melted - see notes
