Ingredient Low Down
Beef Roast
Choose a cheaper cut of meat like a chuck, inside round, brisket, or flank roast. There is no point in cooking a nice expensive roast for long periods of time. It will dry out the nicer cut of meat. Instead save money and trim your food budget by making a nice comfort food family meal like this allergy friendly pot roast recipe with a cheaper and tougher cut of roast.
Cook it long and low and it will amaze you with how tender it becomes. For more information on cuts of meat check with the Cattleman's Beef Board USA or Canadian Beef sites. We used an inside round roast in our pictures and video for this crock pot pot roast recipe.
Potatoes
Small Idahoan, Russets, waxy yellow, red, or Yukon potatoes work really well in this allergy friendly slow cooker pot roast recipe. Cut them in even-ish 6 pieces. I cut them down the middle top to tip then each half is cut twice width-wise so we end up with 6 pieces in the end for our crock pot roast with potatoes and carrots. Gem, baby, or fingerling potatoes can also be used cut in half or added whole if they are small.
Coconut Aminos
We don't use soy sauce and our favourite allergy-friendly substitution is fermented coconut sap. We like Naked and Saucy or Coconut Secret but they may have cross contact issues for some allergens, check with the manufacturer. Coconut aminos are a bit sweeter than soy sauce so if you choose to swap out the coconut aminos make sure to reduce the amount of salt you use and taste your gravy if you use the drippings in it before adding more salt.
If you cannot have coconut there are also tamarind based not-soy sauces. San-J has a no-soy sauce you may want to check out. They may not be suitable for all with peanut and legume allergies.
Another option is to soak dried mushrooms in warm water for 20 mins, strain out the mushrooms (use them in your gravy or as a garnish for the easy slow cooker pot roast) and keep the mushroom broth to use instead of the coconut aminos.
Neutral Oil
Any high temperature neutral tasting oil that is safe for your food allergies will work. Canola, coconut oil, and avocado oil are some common ones to check out to see if they work for you and your food allergies.
How to Make An Easy Slow Cooker Pot Roast

Prep the Beef Roast
Season the beef roast with salt and pepper. Heat a pan over high heat, and sear the beef 2-3 minutes on each side. Move the roast to the centre of the slow cooker pot and set aside.

Soften the Veggies
Reduce heat to medium in the pan, pour in oil. Add onions to the pan and cook until translucent, about 3-5 minutes. They may look a bit brown but they are picking up the browned meat bits from searing the meat. Toss garlic in the pan and cook 1-2 minutes before adding the carrots. Cook for another 3-5 minutes.

Start the Sauce
Pour the broth over the carrots, onions, and garlic to deglaze. Scrape the bottom of the pan to make sure all the browned beef bits are added to the broth. Add in coconut aminos, apple cider vinegar, and balsamic vinegar, stir to combine. Bring to a simmer.

Fill the Crock Pot
While the sauce is coming up to a simmer, place cut potatoes around the allergy friendly slow cooker pot roast in the slow cooker. Pour the simmered broth, onions, garlic, and carrots over the potatoes.

Cover & Cook the Pot Roast
Cover the slow cooker with its lid. Cook on low for 8-10 hours or high for 5-6 hours. When finished cooking, remove the roast, let it rest before carving. Strain out the broth from the potatoes and carrots using a fine mesh sieve. Use the broth to make gravy, if desired or serve as an au jus. Serve the easy slow cooker pot roast with the cooked potatoes and carrots.

- Lamb or Bison - grab a lamb or bison roast and use it in the allergy friendly pot roast recipe instead of beef.
- Coconut Free - use tamarind based no-soy sauce or mushroom broth for the liquid in this easy slow cooker pot roast.

Storage and Reheating Instructions
What is The Best Way to Store This Recipe Leftovers?
The crock pot pot roast leftovers will last in the fridge for up to 3 days in an airtight container. Store the carrots and potatoes separately from any gravy or broth, for best results.
Our Favourite Way to Reheat This Recipe Leftovers?
We don't always heat allergy friendly pot roast leftovers up but will instead cut the leftover beef pot roast thinly as possible and use it as sandwich meat or in a French Dip / Beef Dip sandwich.
To reheat the allergy friendly slow cooker pot roast we use a medium pan, add leftover gravy and thin it out with a bit of water whisked in. Add the beef to the pan, cover and heat over medium high heat with the gravy simmering for about 5 minutes. Remove the lid and let the excess water boil off and the gravy thicken back up, stirring often.
The potatoes and carrots from the pot roast on slow cooker should be heated in a separate pan in warm oil over medium heat until heated through and slightly crispy, but not burnt on the outside.
How Can You Save Time Making This Recipe?
To meal-prep this crock pot roast with potatoes and carrots recipe, cut the onions and carrots ahead of time and freeze them. Thaw before using, for best results. Have the roast all trussed up and ready to go. Skip the searing of the beef and put everything in the slow cooker instead of sauteeing it all before adding it to the slow cooker pot.

FAQ
The best kind of cuts of beef for a pot roast are tougher and cheaper ones. The slow cooking over a long period of time in broth will help to break down the meat and make it more tender. Chuck, inside round, bottom blade, and brisket roasts all work well to use when making a slow cooker pot roast. Using a tougher cut generally means it is also a cheaper cut of meat which makes this allergy friendly slow cooker pot roast recipe a great budget friendly family meal.

What To Pair This Recipe With
An allergy friendly slow cooker pot roast is great because it already has the veg and carb cooked all in with it. If our kids are really hungry we will do up a salad or an easy vegetable side dish to serve along it.
